Scalloped Cashew Potatoes






Some homestyle comfort food to nourish the soul as well as the body. 

See the photos - first with tumeric and without.  it does not much affect the flavor, but the healing power of tumeric including as an anti-inflammatory is not to be under-rated. especially since potatoes tend to be infammatory.

Ingredients :

Raw Cashews – 1/2 cup
Coconut Mylk (option can substitute water or other mylks)
Potatoes – 1 lb
Sesame or other favorite saute oil

(spices to suit your taste)
Mustard Seed
Tumeric (optional - highly recommended fresh grated)
Red chilli powder
Black pepper
Salt
Cinnamon, Nutmeg and/or Cloves (powder)
Hing or Garlic
Fresh green habenero or chilli peppers
Cilantro or Parsley chopped for garnish


instructions:

SOAK the cashews for 6 hours or so - start them in the morning if you are going to make for an evening meal.

DRAIN the water after the soak time and put the cashews into a small blender such as a SOGO or Magic Bullet.  (you can use a full size blender but its really more clean up. )

ADD a few spoonfuls of clean water OR Coconut Mylk.  obviously, the coconut mylk will make a creamier result.

BLEND and add more liquid by the spoonfuls until the creamy consistency of cheese sauce appears.

ADD all of the spices except the Mustard Seeds and Fresh hot green peppers.

BLEND til thoroughly incorporated.  experiment with the flavors and colors of these spices to get the taste that you like by adding a little at a time.   all of the ingredients in this are quite flexible.  when its ready, let it rest while you make the potatoes.

PEEL and SLICE the potatoes into thin bite sized slivers.

IN A WOK or CAST IRON SKILLET heat the oil and Mustard Seeds

ADD the potatoes.

SAUTE until they begin to brown.

CHOP FINELY and ADD the Fresh hot green peppers to the skillet or wok.

REDUCE HEAT or turn it off before ADDING the cashew sauce.

STIR it in to cover the potatoes.

COVER and let it rest a few minutes.   i find a minute or 2 on low heat then a 3 - 5 minute rest is good.

SERVE it right up!
 

You can make a similar dish with Cauliflower instead.  I would recommend using some cumin seeds instead of mustard seeds in with the oil and follow all the rest as given above.  The only other tweek: it may be necessary to use more Cashews since the Cauliflower soaks up the sauce.

Fresh Raspberry Tarte !!!!

Vegan Raspberry Tarte
(with Vegan Chocolate Ganache!)

its RASPBERRY SEASON!




for this you will need approx 2 cups raspberries - we picked them this morning - wow !

CRUST

1/3 Cup finely ground Almonds/ or mixed nuts
1/2 Cup Oatmeal
1/4 Cup xylobrit
1/4 Cup creamed coconut melted
1/4 teaspoon cinnamon
1/2 teaspoon vanilla

In a cup placed into boiled water bath, melt the creamed coconut. Add the vanilla and mix well.
stir for 2 -3 minutes while the melted coconut is hot.

In a food processor, combine the almonds and half of the oats, until well ground.
Add the remaining oatmeal, cinnamon and xylobrit, pulsing to combine.

Empty the dry mixture into a medium sized bowl and pour the hot syrup over it - stir it til totally coated and sticking together in clumps.

Once the crust mixture is well combined, transfer to an 8 inch tart pan.

Spread out and evenly press the mixture along the bottom and up the sides of the pan.

Chill to set, about 20 minutes or just while you prepare the filling.


CASHEW KREAM

Take one heaping cup of raw unsalted cashews and soak covered in cold water for min 4 hours but ok to leave it even overnight.

When you are ready, toss it all with one cup icy cold water into the blender. Whiz it up. In about a minute you will have the most sumptuous base for a number of uses.

fill the crust with this quickly before you eat it all from the spatula

or if you prefer:

TOFU KREAM

1/2 Package Soft Silken Tofu
1 teaspoon Lemon Juice
1 1/2 teaspoons Vanilla Extract
4 Tablespoons Confectioners Sugar
1 1/2 Tablespoons Arrowroot Powder
2 Tablespoons Soy Milk

Combine tofu and sugar in a food processor and process until smooth.
With the machine running, add the arrowroot, soy milk, lemon juice and vanilla through the feeder cap.
Taste and adjust vanilla and soy milk for flavour and consistency, if necessary.

Pour into the waiting crust and return it to the refrigerator.

CHOCOLATE GANACHE

1/2 Cup raw vegan chocolate
2 Tablespoon creamed coconut melted
2 Tablespoons soy mylk

Stir it all together and drizzle over the tart

Top with raspberries and dust with confectioners sugar on serving or as we did- descicated coconut from a coconut that had cracked and so was not suitable for puja.

this recipe goes together really fast and is eaten equally as fast. YUM!




BONUS RECIPE if you have a garden full of raspberries as we do:

Raspberry Sauce

1 cup fresh raspberries
1 tablespoon agave
½ teaspoon fresh lime juice
½ teaspoon rose water


Add all ingredients to a food process and process until the raspberries turn into a sauce. Place a strainer over a large measuring cup or bowl and pour the raspberry sauce into the strainer. Take a small rubber spatula or spoon and stir and press the raspberry sauce through the strainer. Continue until all the raspberry sauce is in the bowl and only the raspberry seeds remain in the strainer. Refrigerate until ready to use.

VEGAN DOG BISCUITS (anti-flea remedy)

Vegan dog biscuits - thats right - for your dog

Flea-b-gone Vegan Dog Biscuits
Brewers yeast is a natural anti-flea remedy.




Makes about 5 dozen half-round biscuits

1 cup whole wheat flour
1/4 cup wheat germ or bran or hemp protien powder
1/4 cup brewer’s yeast
2 tablespoons teaspoons canola oil
1 clove garlic, chopped fine
1/3 cup Braggs amino acids plus 3 tablespoons for basting




1. Heat oven to 400 degrees. Line a sheet pan with parchment paper or oil lightly if its not non-stick. Mix flour, wheat germ (or hemp protien) and brewer’s yeast together in a medium bowl.

2. add oil and garlic.

3. Alternately add the Braggs and flour mixture in 3 parts; mix until well combined. Knead about 2 minutes by hand on floured surface; dough will be sticky.

4. On a lightly floured surface, roll dough out about 3/8 inch thick. Cut out round or bone shapes if you are ambitious. this dough was too soft for my skills so i went for half moons.

5. place carefully on the baking sheet. Bake 10 minutes, rotate baking sheet, and baste with approx 3 tablespoons Braggs. Bake 10 minutes longer.

6.Turn off oven, leaving oven door closed. Leave pan in oven for 1 1/2 hours longer to harden and dry them.

note: i still had to leave them undisturbed on the open tray overnight to dry out - some sources say to leave in the oven without opening dooe for 8 to 16 hours.

Vegan Hearty Parsnip Soup



Vegan Parsnip Soup for a cold hard day

This is probably the best pureed soup I have made in a long time.

Enjoyed this with some flax crackers for a late lunch after a brisk day in the garden.
Tonight I think I will have it with a simple lentils and brown rice.



3 large parsnips
1 large carrot
2 small yellow onions
4 cloves garlic
1 inch ginger
Sesame oil
1/2 cup fresh chopped spinach
4 Tablespoons ground walnuts
1/3 cup coconut mylk
1 cup water


Chop the veggies up into 1/2 pieces and cook all except the spinach in sesame oil til soft in a cast iron skillet.
Add the coconut mylk and let it simmer 10 – 15 more minutes.
In the food processor, chop the walnuts and then add the spinach.
Let the veggies cool and then add a cup or more of water to whiz them in with the spinach and nuts to fine puree.
Return to the pot to heat thru.

Vegan Cashew Alpha-re-do Sauce

make this gorgeous indulgent sauce and serve it over pasta. no soy, no pine nuts, cashews instead of cheez.




whole semolina pastas are my favorite but dont be shy about using whole wheat or spelt pastas or any other. its ALL good.


Ingredients:

1 cup vegetable stock
1 cup raw cashews

generous dollop of hazelnut oil, as needed

1 head garlic minced or less to taste
1 small onion, chopped smallish
4 - 5 mushrooms chopped in chunks
1/2 of a red bell pepper fine chopped (I didn’t have one this time)

1/2 pound whole grain or corn & rice pasta
1/2 teaspoon sea salt

1 tablespoon nutritional yeast flakes
1 cup fresh spinach chopped in thin slivers
a few fresh basil leaves coarsely chopped
1/4 teaspoon turmeric
1/4 teaspoon chili powder
hazelnut or coconut mylk, a few spoonfuls as needed, optional



How to:

1. make vegetable broth according to your favorite recipe (or see below) strain one cup and for this recipe and reserve the rest for soup.

2. bring this stock it to boil, and then remove from heat. Add the cashews to the broth and cover, allowing them to soak for at least 2 hours.

3. Chop the garlic, mushrooms and onions (red bell pepper is nice here too)– separately chop the spinach and basil

4. Pour the cashews and broth into a blender and puree them until creamy.

5. Cook pasta according to package directions, .

6. While it cooks, add garlic to the in a cast iron skillet then the mushrooms and onion. Cook over a medium heat until onion is translucent then throw in the spinach and basil and cook another 30 seconds or so.

7. Pour cashew mixture into the skillet with the veggies and add sea salt, nutritional yeast, chili and turmeric. Heat until sauce comes to a very low simmer.

8. if the sauce is to thick, add a mylk to get the desired consistency.

9. Pour over pasta and enjoy the decadance!


A Vegetable Stock Recipe

Ingredients:
1 gallon cold water
1 large onion, peeled and chopped
1 medium stalk of celery, chopped
1 medium carrot, peeled and chopped
½ medium turnip, chopped
3 cloves garlic, peeled and crushed
2 Tbsp vegetable oil
1 bay leaf
½ tsp dried thyme
3-4 fresh parsley stems
3-4 whole black peppercorns
1 whole clove
Salt if desired

first:
Make a sachet d'epices by tying the thyme, peppercorns, clove, parsley stems and bay leaf into a piece of cheesecloth. Alternatively they can go in loose if preferred.

then:
In a heavy-bottomed stock pot or soup pot, heat the oil over medium heat. Lower the heat, add all the vegetables and cook with the lid on, for about 5 minutes or until the onions are softened and slightly translucent not browned.

finally:
Add the water and the sachet (or loose herbs), bring to a boil, then lower to a simmer. Simmer for 30-45 minutes.

Strain, cool and refrigerate.
The veggies can be pureed for other dishes or kept in the broth for soup if they have been first chopped to bite size pieces before adding to the second step
.
Makes 1 gallon of stock.

Wheatgrass & Sprouts !!

Wheatgrass & juice (grow your own)



A fun way to consume wheat is to grow the whole wheat seeds as grass. The chlorophyll content of wheat grass is very high. The grass can be chewed to obtain the juice, spitting out the pulp. Special juicers for wheat grass are on the market. Wheatgrass will not juice up properly in a regular juicer. Recommended are hand-crank juicers especially for off-grid.


How to grow wheat-grass

Soak adequate quantity of unpolished wheat-grain overnight in water in any non-plastic container (after cleaning and washing it thoroughly)

For planting, clay pots or glazed with holes or any flat shallow trays made from wood or steel may be used.

For each person, about 25 grams can be sown every day in a new pot or basin so that a continous supply is available. 7 to 9 pots would ensure a fresh harvest every day of the week. Sow twice as much or more for someone who has depressed immunity

For a person who is sick the amount of wheat required to be sown everyday is about 50 to 100 grams.

Do not add any chemicals or fertilizers. Agni hotra ash is just the best fertilizer in the world. Cow -dung may be added as manure instead.

Spread the soaked wheat on the surface of the soil so that the grains are touching one another.

Sprinkle a thin layer of soil on the wheat grains .

Cover the pot with a newspaper to provide darkness which helps the sprouting and also to prevent the birds from eating the wheat if outdoors. It grows uite well on a balcony or a windowsill or a covered verandah.

Next day uncover the pot and spray on some water and again cover it with the newspaper.

Repeat step 7 everyday until you see green leaves sprouting through the soil. Stop covering the pot as soon as the green leaves appear.

Everyday water the pot lightly but adequately depending upon the season. Beautiful green blades of grass keep growing in height everyday.

As soon as the grass is about 8 inches tall ( which usually happens around the 7th to the 9th day from the date of sowing) harvest the grass by cutting with a clean pair of scissors about 1/2" above the surface of the soil.

The harvested wheat grass is now ready to be chewed or juiced.

A second round of wheat grass will again grow in about 6 to 7 days with daily watering as before.

After the second harvest from the same pot, remove all the soil in the pot onto a newspaper- breakup all the roots and mix them with the soil.

Add a bit of cowdung or ash from vedic yajnya to this to rejuvenate the soil. Its now ready for reuse for a fresh sowing of wheat.


How to juice your wheat grass

I have heard electric blenders ruin the grass as the rapid blade movement causes oxidation of the chlorophyll and renders it useless.

A manual juicer maybe used or you can use any stone crushing method available in the home for making chutneys. This second method is tedious. (Im currently scouting a crank-model.

Add a little water while grinding, if pounding- strain the juice through a clean cloth into a cup or a glass. Grind again adding water - repeat this process until the remaining grass is almost white. use the leftover grass in your plants as manure.

To chew - a good mouthful is enough, more if you wish, should be taken early morning and chewed until the remaining cud in the mouth is almost white. Spit it out.

If juiced - 1/4 to 1/3 of a glass everyday. but remember that the juice must be drunk immediately on juicing. its bitter and goes down nicely with apple or carrot juice mixd or as a chaser.

For a low immune system - 1/4 to 1/2 glass of wheat grass juice. 2 to 3 times per day - the important thing being to drink the juice right after juicing.

The quantity should be gradually increased to about 8 ounces a day if chronically ill (approx one glass full). This is not a substitute for medical help. See a healer according to your needs. Wheatgrass juice will help as a dietary supplement.

Wheat can be crushed thoroughly and applied externally on Cancers and Ulcers as a poultice.
Wheat grass juice is also effective as an eye-bath (using an eye-cup).

((((((( SPROUTS! )))))))

Many legumes (beans) grains and seeds will make delicious sprouts.
Sprouting makes vegetable protein easy. And can be made anywhere – even camping.

There are both physical and spiritual benefits to purifying our bodies with a vegan diet. Sprouts are an excellent staple food to raise our sensitivity to higher vibrations such as found in the Vedic Sanskrit mantras and in the nadam of silent meditation or while gazing at and offering intents to the yajnya. When we are high in vibration, we are more sensitive to all living beings and are more useful in the service of humanity.




dried beans: mung, lentils of any variety, adzuki, garbanzo (chickpea), black bean, soy bean,

Wash and soak the dried beans in room temp water for minimum 12 hours or up to 15 hours. Rinse again and put them into a sprout tower as shown. If you don’t have one, use a colander lined with a clean damp thin kitchen linen or muslin and covered with same. Twice every day – morning and night – rinse in cool fresh water. If its warm weather rinse more often so its a good idea to keep them handy by the sink. At about the end of day 2 you will see them cracking and sprouting. By day 3 or 4 they are perfect to eat. If you are using a tower as I have, start a fresh batch every other day and you will have a continuous supply as one layer runs out the next is ready to eat. When one unit is empty, fill with freshly soaked beans and start a new batch so it goes on and on and on....

seeds: celery, alfalfa, clover, oats, radish, fenugreek, and sunflower seed,

grains: rye, wheat, buckwheat, barley, millet, and even rice and more.

Soak the desired amount of seeds or grains in a jar by filling the jar half-way with tepid water and covering it with cheese-cloth or muslin and a rubber band. Keep the jar in a dark area, at room temperature, for about five hours. After five hours, drain, rinse, and let the seeds stand without water for about eight to twelve hours. For the next six days, the seeds should be rinsed and drained twice a day using lukewarm water to prevent rotting. They should still be kept at room temperature in a dark place. After the sixth day, place them in the light for one more day to increase their chlorophyll content. Seeds will expand about eight times the original amount so remember this when choosing a jar and measuring out the seeds. A cheesecloth bag also works suspended above the sink or with something under to catch the drips.


Pile them on top of anything you can think of, as a side dish or topping, in a wrap or salad – use your imagination. You can mix up just about any bean in a sprouting situation except the chickpeas which take a bit longer to sprout so I keep them separately.

A rule of thumb with seeds and grains is to not mix the seeds with the grains ever and mix only the seeds (or grains )of the same size to have them sprout at the same time or else keep them each in separate containers.

*** One of the many benefits of sprouts is their high energy content. The following is a brief outline of the nutritional value of some of the more popular sprouts.

LEGUMES are high in both protein and starch and are acid-forming unless sprouted. Sprouting helps to reduce the acid-alkaline imbalance.

Mung beans, similar in composition to fruits, are rich in vitamins A, C, and B complex.

SEEDS contain a great deal of phosphorous, an important mineral for spiritual aspirants, who want to increase their alertness and mental abilities. Phosphorous is also necessary for healthy bones and teeth, wonders for little growing people.

Sunflower seeds are rich in vitamins B and D and all the essential amino acids.

Sesame seeds are a rich source of calcium, iron, phosphorous, niacin, and protein.

Alfalfa, probably the most popular sprouted seed, contains much chlorophyll, as well as vitamins A, B complex, C, D, E, G. K, and U. It also has large amounts of iron, calcium, phosphorous, and sulphur.

GRAINS. Sprouted wheat contains vitamins C, E, B complex, magnesium, calcium, phosphorous, sodium, potassium, protein, enzymes, chlorophyll, and possibly B-17. I n its cooked form, wheat intolerances are becoming common, but when sprouted, a large portion of starch is converted to simple sugars, making it acceptable to many who would otherwise need to eliminate wheat as a food source.

buckwheat is rich in lecithin and rutin.

Vegan - (& wheat-free!) Quinoa Kake

VEGAN Quinoa KAKE

this is a very imaginative kake -- Not only does this cake contain no wheat, it ‘s made with cooked quinoa (rather than quinoa flour), it has a dense, moist texture and intense chocolatey-ness. AND it is naturally sweet without shoogah. its the dates, cranberries and orange juice as well as the optional coconut makes it very sweet indeed! most amerikans dont eat this well for supper let alone for dessert! - enjoy!


ingredients:

2/3 cup white or golden quinoa
1 1/3 cup water

1/2 cups orange juice
30 medjool dates diced small

1/3 cup soymylk

4 Tbsp flax meal
4 Tbsp boiling water

1 tsp. pure vanilla extract
1/2 cup veg oil

1 cup cocoa powder
3 tsp. aluminum-free baking powder

optional:
1/4 cup desicated coconut
1/4 cup hulled hemp seeds
1/4 cup dried cranberries
1/4 cup nuts


DO IT:

1. Bring the quinoa and water to a boil in a medium saucepan. Cover, reduce to a simmer and cook for 10 minutes. Turn off the heat and leave the covered saucepan on the burner for another 10 minutes. Fluff with a fork and allow the quinoa to cool.

2. meanwhile - dice up the dates fine and add to the orange juice – add them to the cooking quinoa in the last minutes.

3. Preheat the oven to 350°F. Lightly oil and Line the bottoms of the pans cocoa dusting or parchment.

4. Whip up the soymylk, gummy flax and vanilla in a blender or food processor preferably.

5. add the oil slowly to the blender and continue to blend until smooth then pour it all into a large bowl.

6. By hand, mix the cooked quinoa and dates with its juice into the bowl.

7. last, sift the cocoa and baking powder together and add it - stir it well.

8. Divide the batter between the 2 pans and bake on the center oven rack for 40 to 45 minutes or until a knife inserted in the center comes out clean.

9. Remove the cake from the oven and cool completely in the pan before serving.

Some frosting ideas:

CHOCOLATE AVACADO SPREAD

mash up with a fork 2 very soft large avacados and add to it a dollop of aguave nectar and 2 heaping Tablespoons of cocoa powder. whip it up by hand with the fork, this is enough to frost the top and sides of an average kake.

IMPORTANT to note is avacado wont last more than a few hours so if i am making this for a birthday or other large gathering i will frost it just last minute. dont worry - there are never leftovers. if i am making it for just us 2 at home i make it with one small avacado at a time and put the frosting on when serving the kake. this gives a generous amount to 2 people and could stretch one avacado to 4 + easily with a large avacado.

Store in a sealed container in the refrigerator for up to 1 week or freeze for up to 1 month. Serves 8-16.
