Vegan Veg Patties - Majik with Leftovers

whats for leftovers, dear?

this recipe is so versatile you can swallow up just about any cooked leftover veg, grain and bean in the house. play with the proportions to get the right "dough" feeling while squishing it in your fingers in the bowl. here is what my beloved made with todays leftovers.




cooked, cooled leftover (day old) ingredients:

cubed rutabaga -called turnip or swede alternately (3/4 cup)
brown rice (about 1.5 cups)
broccoli (just a couple pieces)
cabbage (1 cup diced up very fine)
lentils (about 1/2 cup)

to this we added fresh but just as well could have been day old cooked:
1 small onion (diced superfine)
3 big cloves garlic (diced superfine)
spelt semolina flour (approx 1/2 cup)
a few spoonfuls of water
seasonings and spices to taste

sesame oil

note: a food processor is a plus here but not necessary if you take a few minutes to chop it all up with a big knife and mush it up with your hands in a bowl. loads of fun!

shape into patties with floured hands or even dredge them in fine bread crumbs to soak up more of the cooking oil if you need more fat and calories in your diet. saute in sesame or other healthy oil until brown and crispy enough to flip and serve.

serve with hummous, sauted mushrooms, salad, steamed veg, pita or grainy breads, sprouts, sesame, hemp and other toasted or hulled seeds, vegan rice cheez, just use some imagination and whatever is on hand.



other cooked, cooled leftover ingredients that work well are:
quinoa, couscous, any bean mashed up, any peppers, oatmeal, carrots if they are cooked soft enough, peas, sprouts fresh or wilted, spinach, zucchini and squashes (reduce the water added), sweet potato or any potato mashed, the list goes on and on...

eating vegan is the most healthy and inexpensive way to go. we even cooked these up in an iron skillet on the woodstove range that we use to heat the house. our lifestyle is so cost effective in fact that we can afford sumptuous luxurious hand made raw vegan chocolates regularly even during our economic crisises. if anyone tells you its expensive to eat healthy they are sadly taken in by the health-craze marketing scams. to add to the savings of NOT buying expensive un-healthy animal-based products, we get nearly all our vegetables locally and seasonally at farmers markets or street sellers and he remainder in the day old or half off section of the shops and grains, pastas, flours and more can also be found at the 50% off shelf at the sell-by date goes. we usually have more than we can eat and make leftovers like this often.

there is a super charge of vitamins and minerals as well as veg-protiens and carbs in this one all rolled into one easy pattie. for the hard workers out there that want a little extra fat and calories, use some extra flour (gram or chicpea flour is great!) or bread crumbs to coat the pattie and that will soak up more of the oil used. a ratio of 1/3 or more bean in this recipe will assure protien. we use sesame oil for nearly every dish like this one. safflower oil is good also.
