Vegan Apple Kake

1 - 1/4 cup water

2 small apples finely diced or grated

12 medjool dates chopped fine

1 Tbsp finely chopped fresh ginger

1/2 cups sesame, groundnut or veg oil

2 - 1/2 cups flour (for this i used
1 cup spelt, 1 cup unbleached white, 1/2 cup buckwheat)

2 1/2 tsp baking powder

1/2 cup ground nuts (i used hazelnuts)

3 tsp cinnamon/nutmeg/clove to taste (i used powdered
spices for chai masala)



first prepare the fruit by heating in the water til soft or puree it

when the fruit is soft (5 min) add the liquids incl the oil to the dry ingredients and
stir it up til smooth.

bake in an oiled and floured pan for 30- 35 min til done.

cool and turn onto a plate where you may want to sprinkle it
as shown thru a paper snowflake with some carob or cocoa.

this works well with pears too but may need to reduce the
water just a touch. any nuts will do that you like with
apples. brazil nuts are divine.
