Vegan - (& wheat-free!) Quinoa Kake

VEGAN Quinoa KAKE
w kremey chocolate avacado spread



this is a very imaginative kake -- Not only does this cake contain no wheat, it ‘s made with cooked quinoa (rather than quinoa flour), it has a dense, moist texture and intense chocolatey-ness. AND it is naturally sweet without shoogah. its the dates, cranberries and orange juice as well as the optional coconut makes it very sweet indeed! most amerikans dont eat this well for supper let alone for dessert! - enjoy!


ingredients:

2/3 cup white or golden quinoa
1 1/3 cup water

1/2 cups orange juice
30 medjool dates diced small

1/3 cup soymylk

4 Tbsp flax meal
4 Tbsp boiling water

1 tsp. pure vanilla extract
1/2 cup veg oil

1 cup cocoa powder
3 tsp. aluminum-free baking powder

optional:
1/4 cup desicated coconut
1/4 cup hulled hemp seeds
1/4 cup dried cranberries
1/4 cup nuts


DO IT:

1. Bring the quinoa and water to a boil in a medium saucepan. Cover, reduce to a simmer and cook for 10 minutes. Turn off the heat and leave the covered saucepan on the burner for another 10 minutes. Fluff with a fork and allow the quinoa to cool.

2. meanwhile - dice up the dates fine and add to the orange juice – add them to the cooking quinoa in the last minutes.

3. Preheat the oven to 350°F. Lightly oil and Line the bottoms of the pans cocoa dusting or parchment.

4. Whip up the soymylk, gummy flax and vanilla in a blender or food processor preferably.

5. add the oil slowly to the blender and continue to blend until smooth then pour it all into a large bowl.

6. By hand, mix the cooked quinoa and dates with its juice into the bowl.

7. last, sift the cocoa and baking powder together and add it - stir it well.

8. Divide the batter between the 2 pans and bake on the center oven rack for 40 to 45 minutes or until a knife inserted in the center comes out clean.

9. Remove the cake from the oven and cool completely in the pan before serving.

Some frosting ideas:

CHOCOLATE AVACADO SPREAD

mash up with a fork 2 very soft large avacados and add to it a dollop of aguave nectar and 2 heaping Tablespoons of cocoa powder. whip it up by hand with the fork, this is enough to frost the top and sides of an average kake.

IMPORTANT to note is avacado wont last more than a few hours so if i am making this for a birthday or other large gathering i will frost it just last minute. dont worry - there are never leftovers. if i am making it for just us 2 at home i make it with one small avacado at a time and put the frosting on when serving the kake. this gives a generous amount to 2 people and could stretch one avacado to 4 + easily with a large avacado.

Store in a sealed container in the refrigerator for up to 1 week or freeze for up to 1 month. Serves 8-16.

Vegan Spirulina Carob Brownies

Carobies with Spirulina and maca root for a mornings when i rather have this with tea than a cold smoothie







heres how its done.



1 mashed banana



17- 20 medjool dates

1- 1/2 cups water

8 - 10 lovin spoonfuls of spirulina powder



2 - 1/2 cups unbleached flour

(1c spelt / 1c whole wheat / 1/2c buckwheat is great)

2 tsp baking powder

4 Tbls maca root powder



1/2 cups sesame, groundnut or veg oil



options:

1/3 cups macadamia or other coarse chopped nuts

and/or

cranberries, sultanas, raisins

and/or

coconut or whatever else tickles you





1. mash the banana and set aside in the mixing bowl

2. chop the dates fine and to add hot water in a pot or separate bowl

3. stir in the spirulina to dissolve it

4. mix the 3 dry ingredients in the bowl w the banana

5. add the oil and wet ingredients

6. stir it up just til smooth

7. add the optionals like nuts





spoon or pour into an oiled and floured baking square pan

bake 15- 20 minutes or til done at 350F in a pre-heated oven.



have it hot with tea right away! this is enough to keep me going for nearly a week of snowed in winter weather.

the basics:
HANDMADE VEGAN RAW CHOCOLATE

* 4 parts raw cacao powder or grind the raw beans yourself
* 3 parts raw cacao butter or half this with raw creamed coconut

set the raw cacao butter in a bowl into a pot of just boiled water off the stove until melted. raw food is technically not to be heated above 108F. when its ready, stir it into the raw cacoa powder and then add any of the below:

for sweetening (optional):
* 1-3 tsp agave nectar per 1c of mixture above
OR
* 1/4 tsp stevia
OR
* 1/8- 1/4 c mesquite

for the white chocolate, leave a small amount aside without the cacao powder.

the extra special touch:
add optional nuts and natural oils by dividing the batch or making smaller separate batches.

pour or spoon the mixture onto heart shaped molds of any kind, i used baking molds that were meant for heart cupkakes here. layer the dark and light and sprinkle with nuts or whatever tickles your fancy. let it cool and set.

some suggestions for what to add for extra specialness:

dried goji, currant, sultanas or cranberry
any nuts chopped or ground fine (almond, hazelnut, hemp seeds, toasted sesame seed, flax, cashew, pecan, walnut, peanut, desicated oconut, brazilnuts, etc)
peppermint or orange oil

Vegan Carob Brownie Drops




you heard it - brownie drops - vegan of course and so very easy and fast to make.
they are soft enough for a baby if you leave out the nuts. buckwheat makes them
chewy like a brownie. have a shot of organic fair trade espresso with it and buzz all day.

17- 20 dates chopped fine
1- 1/2 cups water

1/2 cups sesame, groundnut or veg oil

1 - 1/2 cups spelt flour
1 cup buckwheat flour
2 - 1/2 tsp baking powder
1/2 cup carob powder (or cocoa)

1/2 cup coarse chopped walnuts
1/4 cup hulled hemp seeds
1/4 cup flax seeds

mix it all up starting with the dates soaking or heated in the water
add the oil and liquid/dates to the dry ingredients and nuts and stir
to a thick batter.

drop by a spoon on an oiled or parchment lined baking tray without crowding
for 7 - 9 min at 350F. they wont last long. approx 28 drop cookies

Vegan Lasagna

fit for a special holiday meal.

Vegan Lasagna

This recipe is more of an art than a step by step. Its so flexible. Here is the basic order to follow. get creative using ingredients on hand or to suit your fancy.




1. Make or buy a tomato sauce with organic tomatoes and spice it up however you like it. *** my bonus plum tomato sauce recipe at the very end

2. No-boil vegan pasta sheets are a great time saver - I used 14 -but there are some who would make theirs from scratch.

3. for the oval casserole dish pictured I used half of a tofu container for this step. Silken is best but wasn’t available this time so I used firm and mashed it with a fork along with oregano, basil, Italian seasoning and chopped red pepper, if you prefer you can add the pepper and even the mushrooms to the next step but I prefer not to as fewer enzymes are lost this way.

4. chop an onion fine with some garlic to taste and add it to an iron skillet with soysages til browned.

5. meanwhile chop up several mushrooms and prepare some fresh spinach.

6. now its time to layer it up. There is room for variation on this but basically start with a watered down layer of sauce on the bottom. The extra water added there is really necessary so it doesn’t burn. Also if you are using a jar of sauce it may need more water.

Here is the order I used this time:

Sauce, the flat noodle sheets, more sauce, spinach, tofu mixture, soysages mixture, mushrooms, sauce, noodles, sauce, spinach, tofu mixture, soysages mixture, mushrooms, sauce, tofu mixture, mushrooms, fill in any spots with sauce on top too.

Tip to using no-boil lasagna sheets is that sauce must go under and on top of each layer of them.

7. now cover it up with foil tightly and bake 350 F for 35 - 45 min



• you can also use vegan rice-cheezes which makes it really nice but I didn’t have any at this time. If you do, take the foil off for the last 7 – 10 min to brown it.

* another note – this is a heavy soy meal which is why I used only half the package of tofu. The soysages add more flavor but both together make it seem more the traditional way we envision lasagna. We made it for Xmas dinner as a treat.

BONUS! *** make your own home made plum tomato sauce:

• olive oil
• 4 cloves of garlic finely minced,
• a bunch of fresh basil, leaves picked from stems and coarsely chopped
• 2 – 4 T dried or fresh oregano
• 15 – 20 plum tomatoes from your garden or the farmers market OR
3 big tins of good-quality, whole plum organic tomatoes chopped up a bit
• sea salt and freshly ground black pepper
• one bay leaf
• small amount of water

in a large heated cast iron or heavy pot pour in a bit of olive oil.
Add the garlic, (onion too if you like and mushrooms, peppers, etc but not for this recipe above)
add the basil and the tomatoes together. Stir and mash up the tomatoes to make a chunky sauce as it cooks down
stir and check it often but in between stirrings, leave a lid on it at a simmer.
sea salt and cracked pepper last.

notes:
Some folks will prefer a smoother sauce than I do and would push it thru a sieve after cooking just the tomatoes in garlic and oil without the other veg and herbs yet and before the salt and pepper. And then return it to simmer and cook fully. That’s fine if you do so after its cooked to a good bubble for a few minutes and cooled. But the other veg and herbs will have to be done separate to add after straining. You could theoretically cook it all up as I do and then strain it to make a totally thin smooth sauce with the flavor but not the pieces of herbs, garlic and onion etc in there but why would you want to do that? Some folks do.

Water is another thing that depends entirely on the tomatoes used. The cans generally have enough liquid but fresh tomato tends to need a bit more. I also remove the seeds which is just a preference not necessary but juice is lost there too. Just a touch of water so it doesn’t burn on the bottom of the pot for pasta pouring and more water needed for lasagna.

solstice sweet tooth




this solstice sweetie is better remembered as oatmeal raisin cookie to the mainstream, but that wont stop me from adapting it to fat-free vegan organic standards. its a warming sweet treat and can be adapted with substituting cranberries (craisins) or any dried fruit and nuts. no fat and all vegan all the time.

Cran Oat Tea Biscuits

1 over-ripe banana mashed up
1/2 cup molasses
2 T fine chopped fresh ginger
1 cup whole wheat or spelt or other hearty flour
2 cup oats
2 tsp baking powder
2-3 tsp cinnamon or chai masala
1/3 cup chopped walnuts
1/3 cup chopped dry cranberries (or raisins or apricots or whatever)
1/4 cup coconut

Mix it all together in this order til really thick and you have to use your hands. roll into little (yule) logs about an inch and a half thick and slice into 1/2 - 3/4 inch cookie shape. fill a non-stick or lined baking sheet with these little gems and bake at 350F 10 minutes but probably less. this makes 4 dozen but they are small and you will eat them fast. note: an apple/pear spread would also work to substitute the banana.

Chandika & the Chocolate Box

i also save so much cash by eating my bliss that i can afford to splurge on raw vegan organic chocolate ingredients. alot.

Like mangos, chocolate is best enjoyed naked but thats not what this post is about. lately i have been experimenting in the raw loka - creating healthy vegan raw chocolate from the raw ingredients and adding superfoods. this kind of confectionary concoction is nothing less than alchemy and a life's work. here is where i have begun if you like to journey into the wild and wonderful realms of the raw please comment and let me know how it goes.

here's the basic ratio i have been working from:

here they are! moulded raw vegan chocolate with cranberries (crosses), coffee and flax (stars), hazelnuts (o's) using Ikea ice cube trays.



the list of additionals that i have tried so far include:
crushed cacao nibs, nuts of all sorts, hulled hemp, cayenne pepper, cinnamon, vanilla bean, orange oil, nutmeg, maca, algaes, etherium gold, coffee, cardamon, ginger, mint oil, desicated coconut, apricot seeds, next i think i will try goji berries..


BALLS!


raw vegan superhero chocolate balls

* 1 + 1/4 cup hulled hemp seeds
* 1 cup raw cacao powder
* 1/4 cup maca (optional superfood of your choice)
* 1 cup dates (food processor) or 1/2 cup pureed fruit spread
* 1/2 cup brazil nuts finely ground
* 1/2 cup gojis chopped

put all these in the food processor in this order until it forms a sticky mass. roll into balls and then roll into crushed nuts or coconut! YUM ! gorgeous!



and now for something divinely simple:

raw vegan tahini chocolate bars

* 50 g. of cacao Butter, melted (or a 1/4 cup Cacao Butter, melted)
* 2 tbsp. raw cacao powder
* 1 tsp. agave nectar
* 2 tbsp. Tahini

1. Melt the cacao butter in a jar suspended in a pot of hot water.
2. In a seprate bowl mix the cacao powder, tahini and agave together.
3. Add the cacao butter to the mix and put into a tray to set.
4. After a few minutes, score it into slices and set completely for 2-3 hours.

kombucha! (and some sparkling concoctions)

Kombucha is a probiotic, fermented tea that is imbibed of medicinal purposes. Kombucha is widely available in health food stores at quite a high price but its easy and inexpensive to make at home and to enhance it with ginger, cinnamon or just about anything you like. As a vegan you might like to substitute Kombucha instead of yogurt as a probiotic.

Kombucha tea also contains the amino acid L-theanine, an acid that occurs in green tea and black tea. L-theanine crosses into the brain and stimulates positive, relaxed feelings. Along with the recent news of the Fukushima nuclear disaster following the earthquake and tsnunami, is being touted that this kombucha has properties that protect its imbibers agains radiation damage. There is growing research in favor of eating many fermented and macrobiotic foods such as kimchee, natto soy beans and saurkraut and drinking Kombucha to help protect against radiation.



I have been brewing Kombucha now for 4 years starting with a mother culture from our Swiss friend while in India. To date we have brewed it in 4 countries and are taking it anywhere we go bottled to travel on shorter trips. I have yet to have had a refrigerator and have brewed it even off-grid camping and made the tea as sun-tea, i find it is not neccessary to refrigerate and the fizzy drink feels like a cold one on a hot day even at room temp. It's basically done by fermenting tea using a visible solid mass of microorganisms called a Kombucha culture or "mushroom". Kombucha Tea provides relief from the symptoms of many ailments (particulary balances the digestive system) and in some cases even bring healing. It strengthens the immune system of the body. The tea is prepared by incubating the "mushroom" in sweet black or green tea. Fermentation does not produce much alcohol in this short process. Normally kombucha contains less than 0.5% alcohol, which classifies kombucha as a non-alcoholic beverage.

Kombucha is not really a mushroom tea as its commonly called, its a brewed from a Symbiotic Colony Of Bacteria and Yeast (SCOBY). like us, it prefers a warm, sweet environment in order to survive and thrive. if we take the time to care for this colony, it thanks us by creating a probiotic drink.

There are quite a few vids out there on making Kombucha. i recommend you surf and experiment. Kombucha brewing is an art so feel free to improvise from here.

ingredients:

1 cup white sugar (yes white, the cultures need this to brew and its already digested when it gets to the drinking stage)

5-8 teabags or spoons of loose tea to taste. this tea needs to contain tannins for the same reason as above. it feeds the Kombucha culture. black and green teas are what i have used as a base adding herbal teas and ginger or cinnamon etc, to enhance it in addition. herbal teas in general do not contain tannins and cant brew on their own. decaf black or green is ok to use too.

1/8 cup white vinegar OR Kombucha "mushroom" /culture from another batch.

ginger, cinnamon, etc whatever you want to flavor it as an option.

now for my version-
step by step:

its not as difficult as this seems here, im just trying to be complete with details. i will try to take some photos step by step when i get to a more settled place again.

1. Wash all utensils with hot sudsy water and rinse well.
2. Add 1 cup white sugar to water. when a rolling boil is reached. Boil water and
sugar for five minutes.
3. Make stong tea with this water-
Turn off heat and add tea bags of black or green
tea. use less water than usual, you can then add more cold purified water later when
you pour into the glass container to ferment.
Steep 10-15 minutes and remove tea leaves or bags and let tea cool (it doesn't
hurt to steep the tea longer and i have been letting the teabags cool in the pot.
Pour cooled tea into a clean gallon size glass container. (pickle jar, vase, etc)
4. Add your Kombucha "mushroom" culture only after the liquid is cool to room temp.
placing it so that the smooth shiny surface lies up. Add 1 cup of fermented
Kombucha Tea from a previous batch (or substitute 1/8 c. distilled vinegar).
5. Place a breathable cotton cloth over the opening of the jar and secure with a rubber
band. This keeps dust, mold, spores and vinegar flies out of the fermenting tea.
(cheesecloth does not give this necessary protection unless you use 2-3 layers).

Allow to sit undisturbed in a well ventilated place away from direct sunlight
for 6 -10 days for the first batch. after the mushroom has grown like a pancake
to cover the liquid, it will take considerably less time, typically 3-4 days. it
should have a vinegary smell by now.

When the tea is brewed to your taste, remove the "mushroom" culture and place it
in a clean temporary container like a bowl reserving a cup of the tea liquid
for the next batch.

* If your culture has grown to a thick "pancake" mass, gently separate into 2 or
more thin layers and place the extra cultures in purified water in glass jars
covered with lid and kept cool and dark. They will lay dormant for approximately
six months, possibly longer. share these with friends or make each flavor with
a separate mushroom as it tends to absorb the flavors.





NOW THE CREATIVE FUN BEGINS:
This is the recommended stage to add enhancers such as ginger. A few hours
before the Kombucha is ready to harvest, boil some minced ginger in a pot of
clean water and cool completely. Add this liquid to the bottles after you strain and pour the
kombucha tea into the bottles. (we have also made ginger kombucha by brewing the ginger right
along with the sugar and tea and adding it cooled to the jar with the mushroom all
together. this seems to work fine as long as the mushroom is always used for
ginger Kombucha). For various flavors you could have several mushrooms one for each.
OR to make unflavored tea, simply pour the fermented tea through a strainer and bottle
it into glass and cap tight. Use food-grade plastic quart bottles to store your Kombucha
at this stage. cap tightly. store in a cool dark place.

Date and label the bottled tea and wait at least 2-4 days for the batch to
become fizzy and sparkling before drinking.

Go on to make a new batch of tea with the "mushroom" waiting in the bowl or keep it dormant
until the next batch as described above when dividing a culture.

Tips:
Sometimes the culture floats on the surface, sometimes it sinks to the bottom of
the liquid. Either way is okay. When the culture sinks to the bottom a new
culture (baby) will begin to grow on the surface of the tea.

Recommended to take a glass of kombucha in the morning on an empty stomach.
another later in the day with food and one at bedtime to maintain optimum health.


now take a fun break and watch what you can do with the excess SCOBY when all your friends have a batch going.

SOME USEFUL VARIATIONS OF TEAS TO ADD IN THE BOTTLING PROCESS TO A STRONG KOMBUCHA BREW.


Poison apple nectar of immortality

1. brew a strong gallon of ginger kombucha

2. on the day its ready to pour into jars:
Bring 1/2 gallon apple juice to a boil along with a 2 sticks of cinnamon , an inch of ginger minced and 1/2 teaspoonful whole cloves. adjust to how spicy you like things. Bring to boil then cool

3. add 1/2 cup goji juice

4. combine the concoction and strain the nectar thru a sieve before jarring or serving

not a poison of course, but a warming fall and winter treat while having your cool kombucha instead of a cup of piping hot cider to keep your probiotics going.



NETTLE KOMBUCHA ELIXIR

Maybe you’re surprised at the idea that nettles play an important role in Irish traditional cuisine and foraging fare.

You definitely need to be armed with rubber gloves though. Ordinary gardening mitts won’t do – as we learned to our cost at the weekend.

Your nettle crop needs to come from an area that hasn’t been sprayed with chemicals, or contaminated by animals or polluted by heavy traffic.

Pick the very tops of tender young nettles. Strip the leaves from the stems (you can discard the stems) and rinse them well, still wearing those gloves.

Make a batch of Stinging Nettle Juice just as you would brew any loose herbal tea - straining the nettles out after bringing to boil then steeping til cool. this is when you want to add it to a strong brew of kombucha tea.

Nettles are a superfood, rich in iron and magnesium. They are famous in Irish folklore for their healing effects – a great tonic during menstruation or the menopause, apparently, as well as rheumatism.


BLACKCURRANT OR ELDERBERRY KOMBUCHA SPARKLING WINE

The blackcurrant has extraordinarily high vitamin C content (302% of the Daily Value per 100 g, table), good levels of potassium, phosphorus, iron and vitamin B5, and a plethora of other essential nutrients

The phytochemicals in currants have demonstrated potential to inhibit inflammation mechanisms suspected to be at the origin of heart disease, cancer, microbial infections or neurological disorders like Alzheimer's disease.

Blackcurrant seed oil is also rich in vitamin E and several unsaturated fatty acids

Make and strain/ cool a tea from a strong brew of 2 - 4 Tbsp of fresh Blackcurrants or Elderberries in 3 - 4 cups of water and add to the strong kombucha brew before bottling.

Elderberry tea helps in treating influenza and fever, cold and flu, asthma and bronchitis, clearing accumulated phlegm in the air passageways, laryngitis, tonsillitis and sinusitis and a number of allergies.

Elderberry tea is known to enhance functional effectiveness of the kidney by helping to get rid of toxins present in the system and is useful in the treatment of arthritic and rheumatic pain.

Elderberry is rich in Vitamin C as well as high amounts of anthocyanin and bioflavonoid content act as immuno-stimulants, thus preventing a number of immune system diseases. This is one of the important elderberry benefits.

It is also an antioxidant, which protects the body against aging free radicals. Elderberry tea is said to reduce the damaging effects of bad cholesterol, or LDL, and is thus helpful in preventing heart diseases. Sciatica and neuralgia can also be treated with elderberry tea.

bring 3 - 4 cups of water to a boil with to 2 – 4 Tbs of dried flowers and cool - this will make a good tea. add to the strong kombucha brew as you bottle it and you will have a sparkling healthful 'wine' that is non-alcoholic.
