solstice sweet tooth
this solstice sweetie is better remembered as oatmeal raisin cookie to the mainstream, but that wont stop me from adapting it to fat-free vegan organic standards. its a warming sweet treat and can be adapted with substituting cranberries (craisins) or any dried fruit and nuts. no fat and all vegan all the time.
Cran Oat Tea Biscuits
1 over-ripe banana mashed up
1/2 cup molasses
2 T fine chopped fresh ginger
1 cup whole wheat or spelt or other hearty flour
2 cup oats
2 tsp baking powder
2-3 tsp cinnamon or chai masala
1/3 cup chopped walnuts
1/3 cup chopped dry cranberries (or raisins or apricots or whatever)
1/4 cup coconut
Mix it all together in this order til really thick and you have to use your hands. roll into little (yule) logs about an inch and a half thick and slice into 1/2 - 3/4 inch cookie shape. fill a non-stick or lined baking sheet with these little gems and bake at 350F 10 minutes but probably less. this makes 4 dozen but they are small and you will eat them fast. note: an apple/pear spread would also work to substitute the banana.
