Vegan Sweet Potato Pankakes

Sweet! Vegan Sweet Potato Latke

A winter staple. Sweet potatoes are loaded with fiber, protein, vitamin A, and vitamin C.



what a treat for brunch or anytime. we had bought 2 bags of sweet potatoes on special, going out of date and though sweet potatoes are just divine baked or steamed and eaten plain - this cost nearly nothing to make and feels really special. i cant wait to plate it up before i start eating these yummies. this makes 14 small latke size potato kakes, you can double or half if. best to keep warm or re-heat in the oven if you are making these for a crowd.

Ingredients:

3- 4 med sweet potatoes
1 sm purple or white onion or 2 leeks or 3-4 shallots
1 Tbsp parsley, fresh if you can
1 tsp marjoram or oregano
or - 1 tsp tumeric
1/2 of the juice of one lemon

2 Tbsps flax meal (ground flax seeds)
2 Tbsps boiling water

4 heaping Tbsps buckwheat flour or whole wheat
or 2 Tbsps hemp protien powder
salt and pepper to taste

Sesame or other veg oil for cooking

How to do it:

1. prepare the sweet potatoes by first peeling and then choose either to:
• steam them in chuncks til half-cooked then shred them
Or
• steam them til fully soft then mash

Meantime

2. Pour the boiling water over the flaxmeal in a small bowl and let let it sit to turn to gelatinous glob.

3. finely dice the onion and herbs and toss with the lemon juice

4. when the sweet potatoes are prepped, mix it all together with the rest of step 3



5. Add seasonings, flour and the flax glob.

6. Mix it all together with a big spoon or spatula.

7. Heat some sesame oil in a cast iron skillet , let it get hot first and then drop spoonfuls of this mixture (don’t crowd). Using the back of the spoon to flatten them to shape. Cook until crisp on the outside and flip to cook both sides til they brown a bit.

Serve with simple side of greens – you can dollup with soy sourkreme or make up some applesause or both to have them like latkes.
In fact this can be done with yellow or white potatoes instead for a more traditional way, as long as the potatoes are fully cooked first.

Nice touch: I had some leftover cooked fennel which I diced up and threw in with the onion.
O it was nice!

another nice one: today i made this with the tumeric and hemp powder instead of buckwheat as a friend had this suggestion and it was wonderful. the sweet potato taste really shined thru!
