vegan buckwheat pancakes - Oh MY!

comfort food griddle-kakes. this recipe reminds me of feeding the houseload of friends sleeping on the floors the morning after a really great party.



this is how its done:

1 heaping cup buckwheat flour
2 1/2 teaspoons baking powder
1 Tablespoon aguave nectar or date or barley or rice syrup
3/4 - 1 cup soy mylk or any nut mylk
1 medium banana, mashed (about 1/2 cup)
1 Tablespoon safflower or sesame oil or melted earth balance

mix and mash it up in that order adding the mylk til you have a pourable batter.

some optionals :
1 teaspoon vanilla or some bean shavings if you are lucky
2-3 Tablespoons ground flaxseed
3 Tablespoons finely chopped walnuts, hazelnuts, almonds whatever nuts are around your house
3 Tablespoons raisins, cranberries or blueberries or even cacao nibs
1/2 - 1 teaspoon cinnamon or chai masala
use your imagination based on whats in the cupboard

heat up an iron griddle with some kind of healthy oil whatever you used above (just not olive or canola) walnut oil is divine if you have it. pour or spoon out apprx 3 inch puddles of batter when the oil is hot enough to splash a drop of water back at you. when the little bubbles form on top, its time to flip them over and marvel at the golden brown patterns while you salivate. each side will take a minute or so. keep them warm til you have a platefull to serve. mean time, you may want to start a home-made fruit syrup to serve along with it beforehand. for good measure in the photo above i toasted some almond slices too for a sprinkle on top. this party was my 50th birthday so no holds barred.





warm fruit for the griddlekakes goes like this but is so very flexible:

1 - 1/2 cups pear or apple or whatever fruit cubed small
1/2 cup raisins or any other dried fruit that is small too
a squeeze of a natural sweetener like aguave or barley malt
a dash or 3 of cinnamon or cardamon or what ever goes well with the fruit you chose
1/4- 1/2 cup water

add the smallest amount of water to the pot at first, adding more so it doesnt burn and so that it doesnt get to watery but makes a nice syrupy consistency as the fruit releases its water too.
heat it up til the fruit is soft - turn the pot on and keep an eye on it while the pancakes are on the griddle. both will finish about the same time.

now eat this hearty breakfast or brunch and your stomach will smile all day long!
