Vegan Lemon Love Kakes

Vegan Lemon Poppy Seed Heart-shaped Cupkakes





















ingredients:

1 cup water

1 lemon juiced and grate the rind

1 small pear grated

12 - 15 medjool dates chopped fine

1/2 cups sesame, groundnut or veg oil

2 - 1/2 cups flour (for this i used
1 cup spelt, 1 cup unbleached white, 1/2 cup wholewheat)

2 1/2 tsp baking powder

1/4 cup poppyseeds



first prepare the fruit by heating in the water til soft -

add the heated fruit liquids incl the oil to the dry ingredients and
stir it up til smooth.

bake in a heart-shaped molded pan for 10- 15 min til done.

cool and turn onto a plate where you may want to drizzle it with cocoa or carob glaze

to make the glaze:
mix in a tiny bowl, 3 tablespoons each of cocoa OR carob powder and aguave nectar, and a few drops of water at at time til the smooth glossy shine is there and it flows.
