Kale salad with Avacado dressing


A classic vegan light lunch or as a side for supper. Is full of Serves great with pasta, quinoa, pilaf, fresh bread or in a roll up.

At just about 25 – 35 cents per serving, you cant complain that vegan eating is expensive. Kale is a dark, leafy greens -. It's loaded with vitamin C and B and A. as well as calcium AND vitamin Ks. key here is the avacado (fats) release the K1 in the body which turns to K2 as its processed in the body. it also contains a good supply of iron the darker kale the better. it takes slightly less than 1 cup a day of this salad to give you a daily dose to help open the Pineal Gland (Third Eye). Want to relieve depression? Dark circles under the eyes? Eat kale.

Walnuts are low in saturated fat and high in both polyunsaturated and mono-unsaturated fat. They are an excellent source of omega-3 and omega-6 fatty acids, particularly when bought in their shells and eaten while fresh. These omegas are hard to find in a vegan diet. Walnuts are also a good source of protein, vitamin B1, B6, folate and vitamin E. so i recommend liberal optional adding of walnuts to this salad, think of more ways to eat them too.


Use your hands when you make this ! Think loving thoughts from the heart and your energy is transferred from your heart thru hands into the food.

It is very filling - could serve 2 - 4 depending on if its a side dish or main dish.

Gather Up: (organic if you can)

7 or 8 stems of dark kale
(optional) 1 stem or 2 of lighter green or purple kale, rocket, spinach, chard or mustard green for a brightening touch
1- small purple onion or leek
1 - 2 Avocados (depending on how slippery you like it)
1 Lemon Juiced
1/4 c grated carrot
fresh basil
sea salt and black or cayenne pepper to taste
ground walnuts (optional on top)
ground flax seeds (optional on top)


Tear or chop the kale leaves from the stems.
Cut spinach or other stems off
Wash them.
Put them in a larger bowl than you think you will need
Add fresh basil
Chop or tear the kale and other greens into very small pieces (big knife)
Dice purple and green onions.
Toss it.

Peel and de-seed the avocado(s) put them in the bowl without chopping, they will get hand squished.
Add the sea salt and cayenne.
Add the lemon juice.
Use your hands to squish and toss. Take your time with it, part of the process is to bruise and soften the kale. It also shrinks a bit just as if it had been cooked.
add the remaining ingredients and toss lightly.

note: You could use a food processor instead of hand squishing which would give you more of a cabbageslaw kind of consistency.

SWEET KALE SALAD
this is sort of a Waldorfy kind of salad with fruit and nuts

for this just eliminate the onion or leek. and eliminate the pepper and basil. a pinch of salt may be to your liking with sweet salad but thats optional.

then add:
1 small fine diced pear
handful of sultanas or raisins
1/4 cup walnuts chopped fine
